The Macchiato, or “stained” espresso, is a way of preparing coffee that originated in Italy. It consists of an espresso with a small amount of milk, hence the name “stained.”
It is important not to confuse it with a latte macchiato, which, on the contrary, consists of large amounts of milk “stained” with a little coffee.

We start with the ingredients: you only need a good coffee and a bit of milk. Make sure to choose a good specialty coffee to make your experience even more enjoyable. We recommend using the best Ecuadorian coffee from Color Café, whether in beans or capsules.
Start by extracting a delicious espresso using your multi-format BACCIO coffee maker. As you may know, if you’ve followed our tutorials and seen our recipes, the espresso should be around 1.2 oz (34 grams). If the coffee is well-extracted, it will have a good body and a nice layer of crema. You can use a small glass or cup (80 – 100 ml).
While the BACCIO coffee maker extracts the espresso, let’s prepare the milk. Place cold or room-temperature milk into your BACCIO electric frother. Press the button once to froth the milk and heat it. If you don’t have a milk frother or a milk mixer, you can also do it manually. And yes, it works well. Not like a professional, but quite acceptable. For this, pour cold milk from the fridge into a jar or glass bottle. Close it and shake vigorously for about half a minute. Open the jar, place it in the microwave without a lid for about 20 seconds at maximum power (800W), which will allow the foam to rise to the top and the milk to settle at the bottom.
Finally, when you have your coffee and milk ready, take the espresso cup and give it a slight swirl. You can also give a few gentle taps to the frother against a hard surface to release any bubbles and settle the foam. Now, to finish, pour a little milk over your espresso and scoop some foam with a spoon to place on top of the coffee.
